Giada’s Vegetable Parmesan

Yesterday mom and I finally got around to making hummus. The recipe only called for one clove of garlic, but I put two of the larger ones on the bulb…YUM!

While watching Chef Giada a few days ago on the Food Network Food Network, I told mom about the Recipe Vegetable Parmesan I had seen. She wanted me to make it, and I finally got around to it today. I had the oven temperature wrong, so it took longer than instructed, but that missing portion is my taste. YUM! I am not a fan of eggplant, but really couldn’t taste it for all the cheese and marinara. I did like the fennel, which again, I had never had before.
